Lentil Chili

We don't eat a lot of meat, so eating enough protein can sometimes be a challenge. We add beans and legumes to things to make up for that, and lentils are probably my favorite. They cook quick, are versatile, and my kids will eat them without too much complaint most of the time.

I found this chili recipe and it's now a favorite. The only addition I make is adding a can of chopped tomatoes for a little more chunkiness. Top with the green onions and sour cream and it's extra good!

1/2 cup of cooked lentils = 20 carbs (tomatoes, onion, and broth are freebies for us)

  1. Made the chili and it was great! Ours was WAY to spicy though so what does that mean... more sour cream! Thanks for the recipes, next the spinach orzo.
