This is hands down the best potato recipe ever...we make it for dinner, for snacks, sometimes multiple times in 24 hours. They are good grilled, or roasted, whatever is easier for you. I like to use little purple or fingerling potatoes the best. They are less starchy, better tasting, and have a nicer effect on Leah's blood sugar.
Carb count will vary depending on which potato is used. (We usually weigh them). Purple or fingerling are ususally about 26 carbs per 1 cup.
