Extremely easy and yummy soup that requires no chopping or dicing! For those busy weeknights when you need dinner ready in 20 minutes. (great without chicken too!) It's good just like this, or you can top it with any of your favorite nacho ingredients!
1 16 oz. can refried beans
1 15 oz. can black beans, rinsed and drained
1 14.5 oz. can reduced sodium chicken broth
1 1/2 cups frozen corn
3/4 cup chunky salsa
3/4 cup cubed cooked chicken breast
1/2 cup water
2 cups reduced fat shredded cheddar
baked tortilla chips
Combine all ingredients except cheese and bring to a boil. Reduce heat and simmer about 10 minutes. Add 1 cup of shredded cheddar and stir over low heat until melted. Crumble baked tortilla chips in bowls and ladle soup over chips. Top with a sprinkle of remaining cheese.
