Veggie Quesadillas

An easy, cheesy way to eat your veggies.


Kids Quesadillas
1/4 cup black beans
1/4 cup shredded carrots
Handful of baby spinach leaves, chopped
Heaping 1/4 cup of shredded Mexican cheese
2 flour tortillas

Combine beans, carrots, spinach, and cheese. Heat a skillet over medium heat and spray with cooking spray. Lay one tortilla in pan, and spread cheese mixture over. Top with second tortilla. After bottom is golden and a little crispy, flip tortilla without causing ingredients to fly all over your kitchen. Remove when second side is golden brown and a little crispy.

Makes 2 servings, 31 carbs per serving (flour tortillas will vary) 





















My Quesadillas
Same as above but add chopped garlic, choppped onion, and a few tablespoons of chunky salsa. Yum!
